Ingredients
  

For the Cookie Dough

  • ¾ cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

For the Cheesecake Filling

  • 4 oz cream cheese softened
  • 2 tablespoon granulated sugar
  • ½ teaspoon vanilla extract

For the Caramel

  • ¼ cup caramel sauce store-bought or homemade

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Beat in the egg and vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture and mix until combined.
  • In a separate bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth to make the cheesecake filling.
  • Take a spoonful of cookie dough, flatten it, and place a small amount of cheesecake filling in the center. Fold the dough around the filling and shape it into a ball.
  • Place the cookie balls on a baking sheet and bake for 10-12 minutes or until golden brown. Let cool slightly before drizzling with caramel sauce.

Notes

Store cookies in an airtight container. These cookies are best enjoyed fresh but can be stored for a couple of days.
