Ingredients
  

For the Salad

  • ½ cup shredded green cabbage
  • ½ cup shredded red cabbage
  • 1 cup shelled edamame, cooked
  • ½ cup shredded carrots
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • ¼ cup toasted sliced almonds

For the Dressing

  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes (optional)

Instructions
 

  • In a large bowl, combine the shredded green cabbage, red cabbage, edamame, carrots, green onions, cilantro, and almonds.
  • In a separate bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, grated ginger, minced garlic, and red pepper flakes.
  • Pour the dressing over the salad and toss until everything is well coated.

Notes

This salad is best served fresh. You can add other vegetables or proteins as desired.
