Instructions
Preheat your oven to 350°F (175°C).
Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla, mixing well.
In another bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt. Gradually add to the wet ingredients.
For the filling, mix softened butter, brown sugar, cinnamon, and cake flour until combined.
Roll out the cookie dough, place a spoonful of filling in the center, and fold over. Seal the edges.
Bake for 10-12 minutes until edges are golden. Let cool.
For the glaze, whisk together powdered sugar, cinnamon, melted butter, and milk until smooth.
Drizzle the glaze over cooled cookies before serving.
Notes
Store cookies in an airtight container for freshness. You can add nuts or chocolate chips for variation.
