Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts or thighs

For the Sauce

  • 1 cup pineapple chunks fresh or canned in juice
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoon olive oil
  • ½ teaspoon chili flakes optional for spice
  • 2 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add chicken and cook until golden brown on both sides.
  • In a bowl, mix pineapple chunks, brown sugar, soy sauce, garlic, ginger, lime juice, and chili flakes.
  • Pour the sauce over the chicken in the skillet and simmer for 10 minutes.
  • Season with salt and pepper. Garnish with fresh cilantro before serving.

Notes

This dish pairs well with rice or steamed vegetables.
