For the Fried Rice

Cooked Rice
Preferably day-old and refrigerated.

Chicken Breast
Diced into bite-sized pieces.

Lightly beaten.

Diced small.

Green Peas
Frozen peas work perfectly.

For the Bang Bang Sauce

Soy Sauce

Bang Bang Sauce
Made from mayonnaise, Sriracha, sweet chili sauce, and rice vinegar.

Neutral oil like canola or vegetable.
Instructions
Heat the oil in a frying pan over medium-high heat. Add the diced chicken and cook until no longer pink.
Add garlic and carrots to the pan, cooking for another 2-3 minutes until the carrots are tender.
Stir in the cooked rice and soy sauce, mixing well to combine. Cook until the rice is heated through.
Push the rice mixture to the side, add the beaten eggs, and scramble until fully cooked.
Mix in the green peas and green onions, cooking for an additional 2 minutes.
Drizzle the Bang Bang Sauce over the fried rice, mixing well to combine. Serve hot.
Notes
You can adjust the spice level of the Bang Bang Sauce by adding more or less Sriracha.
