Ingredients
  

For the Fried Rice

  • 4 cups Cooked Rice Preferably day-old and refrigerated.
  • 1 lb Chicken Breast Diced into bite-sized pieces.
  • 2 large Eggs Lightly beaten.
  • 1 cup Carrots Diced small.
  • 1 cup Green Peas Frozen peas work perfectly.
  • 3 cloves Garlic Minced.
  • 2 stalks Green Onions Used as garnish.

For the Bang Bang Sauce

  • ¼ cup Soy Sauce
  • ½ cup Bang Bang Sauce Made from mayonnaise, Sriracha, sweet chili sauce, and rice vinegar.
  • 2 tablespoon Oil Neutral oil like canola or vegetable.

Instructions
 

  • Heat the oil in a frying pan over medium-high heat. Add the diced chicken and cook until no longer pink.
  • Add garlic and carrots to the pan, cooking for another 2-3 minutes until the carrots are tender.
  • Stir in the cooked rice and soy sauce, mixing well to combine. Cook until the rice is heated through.
  • Push the rice mixture to the side, add the beaten eggs, and scramble until fully cooked.
  • Mix in the green peas and green onions, cooking for an additional 2 minutes.
  • Drizzle the Bang Bang Sauce over the fried rice, mixing well to combine. Serve hot.

Notes

You can adjust the spice level of the Bang Bang Sauce by adding more or less Sriracha.
