Ingredients
  

Muffin Ingredients

  • 2 pieces ripe bananas mashed
  • ½ cup Greek yogurt
  • ¼ cup honey or maple syrup
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Dry Ingredients

  • 1 cup oat flour
  • ½ teaspoon baking powder
  • 1 pinch salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, mix the mashed bananas, Greek yogurt, honey or maple syrup, egg, vanilla extract, and cinnamon until well combined.
  • In another bowl, whisk together the oat flour, baking powder, and salt.
  • Combine the wet and dry ingredients, stirring until just mixed. Do not overmix.
  • Fill the muffin cups about ¾ full with the batter.
  • Bake for 20 minutes or until a toothpick comes out clean.
  • Let the muffins cool before serving.

Notes

You can substitute the honey or maple syrup with agave syrup if desired.
