Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts

For the Marinade

  • 2 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese

For Garnish

  • Fresh basil or parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, place the chicken breasts and season them with salt and pepper. In a bowl, mix olive oil, balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic. Pour this mixture over the chicken.
  • Bake in the preheated oven for 25 minutes, then add cherry tomatoes and mozzarella cheese on top. Bake for an additional 5 minutes until the cheese is melted and bubbly.
  • Remove from the oven and let it rest for a few minutes. Garnish with fresh basil or parsley before serving.

You can serve this dish with a side of vegetables or rice.
