In a baking dish, place the chicken breasts and season them with salt and pepper. In a bowl, mix olive oil, balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic. Pour this mixture over the chicken.
Bake in the preheated oven for 25 minutes, then add cherry tomatoes and mozzarella cheese on top. Bake for an additional 5 minutes until the cheese is melted and bubbly.
Remove from the oven and let it rest for a few minutes. Garnish with fresh basil or parsley before serving.
