Ingredients
  

For the Chicken

  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into bite-size pieces
  • 1 tablespoon olive oil or sesame oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder

For the Mango Glaze

  • 1 ripe mango, peeled and chopped (or ¾ cup mango purée)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 cloves garlic, minced
  • 0.5 teaspoon fresh grated ginger
  • 0.5 teaspoon chili flakes (optional, adjust to taste)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

For Serving (optional)

  • Steamed jasmine rice or rice noodles
  • Sliced green onions
  • Toasted sesame seeds
  • Fresh cilantro or Thai basil
  • Lime wedges

Instructions
 

  • Heat oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and garlic powder. Cook until browned and cooked through.
  • In a mixing bowl, combine mango, soy sauce, honey, rice vinegar, garlic, ginger, chili flakes, and cornstarch mixture. Stir well.
  • Pour the mango glaze over the cooked chicken in the skillet. Cook for a few more minutes until the sauce thickens.
  • Serve chicken with optional toppings like rice, green onions, sesame seeds, cilantro, and lime wedges.

Notes

You can adjust the sweetness and spice level of the glaze by modifying the honey and chili flakes. Serve with your choice of sides.
